Beetroot leaves
We are currently right in the middle of the Beetroot harvesting season here in the UK. Although I am sure many of you are adding this delicious root veggie to your meals or making some delicious hummus. What about the leaves of the beetroot? Often these nutritious leaves are discarded without a second thought. Not only are they rich in vitamin K, copper, manganese, iron and calcium basically lots of wonderful nutrients, these wonderful leaves have a mild, sweet, earthy flavour making them possibly just as tasty as the beets themselves.
So why not try these simple ideas:
One of the most popular ways to prepare beetroot leaves is to simply sauté them, you can add some lemon juice or orange juice to give them a zesty kick or just sauté them with some onions and garlic to create a delicious side dish.
Another option is to add them to your favourite stir fry dishes alongside your other greens.
Create a pesto by adding nuts/seeds such as any left over pumpkin seeds, cheese/nutritional yeast, and a little olive oil.
